Yes. Each table becomes a real grid of cells you can sort, filter or sum - never a picture of the page or one column of pasted text.

Plain numbers, currency amounts, percentages and dates that can be read unambiguously become real Excel values with matching formatting. Anything that converting could change the meaning of - an account number, a postal code, an ambiguous date - is kept as text on purpose.

A page that is only a picture has no data to extract, so a PDF that is entirely scanned can't be converted; text recognition (OCR) isn't available yet. A PDF with only some scanned pages still converts - its other pages' tables and text come through, and we tell you which pages were skipped.
